Easy Einkorn Tortillas

A little time consuming, yes. Well worth the effort? Also YES.
I love these things. If you are like me & love spending a little time to make something from scratch that is DELICIOUS, you’ll love these. They are also SO fun for the kids to join in as well!
I tried a few recipes & then created my own with jovial’s All purpose Einkorn flour! Yum!
Perfect for tacos, fajitas, quesadillas...you name it my friend.
So let’s get started!
- YOU WILL NEED:
- 2 Cups Einkorn All Purpose Flour
- 1 Cup Unbleached White Flour
- 1/2 Teaspoon Baking Powder
- 1/3 Cup Coconut Oil
- 1 Cup HOT water
Notes:
- It’s better for the dough to be wetter at the start, you can always add more flour as you need.
- A cast iron skillet is what I use for this recipe, it’s the best healthy non-stick alternative & has the best flavor as well :)
- I use a cup of regular unbleached flour because it makes the tortillas that much softer. It’s easy to over mix Einkorn flour & make the tortillas tough.
- I get my einkorn flour from Jovial foods!
DIRECTIONS:
- Heat a cast iron or non stick pan on medium heat
- Mix dry ingredients in mixing bowl
- Add coconut oil and mix until dough becomes a crumbly consistency
- Add hot water and mix just until it forms into a ball. Cover with plastic wrap and let rest 30-45 minutes in a non drafty area.
- Once your dough has rested, turn out onto floured surface and form into a “log”, cut with bench scraper or knife into 12 even pieces or more if you want smaller tortillas, form pieces into balls
- Roll out each ball (you’re going to need a lot of flour) and dust each tortilla with a bit of flour before cooking.
- Place a tortilla on cast iron skillet or non stick pan and cook each side for 30-45 seconds, the first side should start bubbling up before you flip it.
- These are best served warm. The coconut oil makes them harden slightly. If you plan on putting them in the fridge and using later, just be sure to heat tortillas on each side in a pan with some butter (10 seconds or so each side) until they are soft again.
