WHAT I EAT IN A DAY


What I eat in a day!


Hello my lovely readers!

Since becoming a mom, I've realized many things(go figure). One of them is: when I eat junk...I feel like junk. Big surprise right? But how do you eat healthy when you have a newborn, infant, or toddler(or all three-shew!)taking up the majority of your time each day(not to mention the other responsibilities, I love it! ;) )? One word my friends, meal prep! I realize meal prepping isn't for everyone, but if you're a mad planner/schedule driven person, meal prepping might be the way to go! I spend about two hours every week prepping healthy lunches and snacks for the week for me and my little guy! Which seems like a lot of time but actually saves me a lot of time in the kitchen through the week!

Since I started my fitness journey, I wanted to be sure to focus on eating REAL foods, and not focus so much on my calorie intake. We all know that if you BURN more calories than you consume, (with the exception of health reasons) you will lose weight(it's science). With that thought in mind, I try to eat a rainbow of foods, with a little splurge every now and then. :)

So here's a peek into what I eat on your average day!

Breakfast:


You may not know this about me, but I'm a very routine person. I can eat pretty much the same thing every day without boredom. My son and I eat oatmeal for breakfast every day! I like to add different fruits(bananas, strawberries, blueberries) sometimes sunflower seeds, almond or peanut butter, sometimes I even add dark chocolate! It's quick, super heart healthy, and D E L I C I O U S! I also drink coffee, because hellllooooo #momlife



Lunch:



One meal that does vary for me on a weekly basis is lunch. Most of the time I'll whip up a homemade soup, packed with veggies and proteins, super easy! But the past couple weeks I've been mixing it up with some meal prep boxes! The one pictured included whole wheat pitas, olives, cucumbers, tomatoes, and homemade tzatziki sauce! Y U M M Y! I'm also super into veggie bowls!

Snacks:
                                                 Whole wheat apple/carrot muffins!


I've got a growing boy on my hands, so healthy snacks are a must! Every week I'll buy fresh veggies and hummus for a quick snack. I also make homemade whole wheat muffins, packed with veggies and fruit. I love trying new muffin recipes. Thank you Pinterest! ;) If you have any great recipes, send them my way!

Dinner:


Dinner looks relatively the same every week at our house. I have about 15 go to meals that I rotate every few grocery trips! My husband is a MEAT EATER, and I mean that in the sense that he lives and breaths being a carnivore. If every vegetable just magically dissipated from the planet, I don't think my husband would notice. He'd just be sitting in the corner with his chicken leg. Ha! Sorry babe, but you know it's true. That being said, in the warm months I keep a garden, and I always include veggies on the menu! Case is a huge fan of steamed carrots and sweet potatoes! We eat a lot of venison, pictured above is a venison steak from a buck my husband shot with his bow last fall! We are both hunters, so it's a major payoff of knowing where our food comes from!
