Einkorn Lemon Cranberry Muffins (NO sugar added!)



Christmas is upon us my friends.


& while it certainly hasn’t been a white Christmas around here(upper 60s!!!) we’ve been getting in the Christmas spirit around here.

Candy, cookies, gingerbread houses oh my….

Sometimes you just gotta cut the sweetness ya know?

& that’s EXACTLY what these Einkorn Lemon Cranberry muffins do for me!
The Einkorn flour has nutrients regular flour doesn’t, the lemon juice & cranberries give them a tart kick, & the maple syrup gives them that slight sweetness, no sugar needed!

NOTES:

-You could totally swap the lemon juice for orange juice, in fact I have & it was AWESOME.
-You can swap Einkorn for regular flour, consistency may differ but muffins are VERY forgiving.
-These only have a slight sweetness, you can add more maple syrup to your liking or add powdered sugar to the top. They go GREAT with coffee!

Ingredients: 

1 stick salted butter, melted

1/2 cup maple syrup

2 large eggs

2 cups einkorn flour (1 cup einkorn wheat berries freshly ground)

1 teaspoon 
baking powder


3/4 cups whole milk

2 cups fresh cranberries , (frozen okay too)

2 Tablespoons of Lemon juice (you can also use the zest if using fresh lemons or oranges) 

Directions:

•Preheat oven to 350 degrees, prepare muffin tin with liners or by swabbing with coconut oil so the muffins do not stick

•mix dry ingredients, fold in wet ingredients, scoop into muffin tin

•bake for 20-25 minutes until toothpick comes out clean!
