Favorite meal prep recipes 


I started meal prepping close to three weeks ago, after I decided it was time to kick my nutrition into high gear after eating super unhealthy my entire pregnancy. I realized how much easier it is to control my calories & just grab something from the fridge pre-made(which also helps when you have a 2 month old & zero time to make healthy meals every day)! Plus I hate wasting food, so I'm less likely to eat something unhealthy when I already have a meal ready to eat!

I had never meal prepped before, but I've already found some favorite recipes that I wanted to share with you! Some are my own I've concocted, others I'll share the recipe links below!

Breakfast Egg Muffins


These egg muffins are SO perfect for on-the-go & are also 21DayFix approved! I used mozzarella instead of feta cheese & they turned out PERFECT.

Baked Oatmeal Cups



These muffins are also great for breakfast, however they are not very sweet so if you have a sweet tooth I would recommend adding a natural sweetener like Stevia or upping the honey measurement. 21DayFix approved!

Sweet Potato & Zucchinni Side



This is one of my own inventions from 2 of my favorite veggies, sweet potatoes & zucchini! 
I just sauteed them in 2 Tbsp of olive oil until soft & added my taste preference of cinnamon//salt//& pepper. It makes a great side to chicken breast or veggie burgers!

Mason jar salads



Mason Jar salads are by far my favorite lunch meal. I've tried many combos but my favorite is this one:

-Start your layering with 2 Tbsp Lite Poppy Seed dressing(I use Ken's)//Cherry tomatoes//Golden delicious apples chopped// halved walnuts//crumbled Feta//& spinach. 
I came up with this one after Pinterest surfing & lots of trial & error!

Combine your favorite healthy foods into a meal & go from there! Eating healthy doesn't have to be monotonous or complicated!
